Jabber & iChat
Jabber (a.k.a. XMPP) is an open and secure instant messaging (IM) solution for which a number of client- and server solutions are available. Jabber supports not only text-messaging but also voice and video.
Possibly one of the most popular Jabber servers is Google Talk, and if you intend running your own, here is a server comparison chart.
What I wasn't aware of, is that Apple's iChat also supports Jabber, and it is very easy to set up for Google Talk.
