Make eBooks for your iPhone

I was curious whether it is possible (of course it is!) to get a PDF converted to an eBook format for the iPhone, and I found these instructions on using the Stanza desktop converter and iPhone app, both of which are free of charge.
A few minutes later, I was browsing through my own book Alternative DNS Servers on my device.
Stanza shows the table of contents:

and this is what a page looks like.

I know next to nothing about eBook formats, but my appetite has been whet, and I already have a number of unanswered questions:
- What's wrong with the word "illustra?tion" above? (Is that a hyphenation in the orignal PDF?)
- Why are there no images in the resulting eBook?
- Is there some way to get minimal formatting into an eBook?
and so on, and so forth.
